Chemical formula: NaHCO3, commonly known as baking soda, baking powder, or soda ash.
Sodium bicarbonate (baking soda) is mainly used in food processing, chemical production, water treatment, and pharmaceuticals, and is an important basic chemical raw material. When selecting a sodium bicarbonate, it is recommended to focus on the following: purity (≥99%), particle size (micro/fine/coarse powder), and moisture content (≤0.5%).
Properties: White powder or monoclinic crystalline powder, odorless, salty taste, easily soluble in water, but less soluble than sodium carbonate in water, insoluble in ethanol, and its aqueous solution is slightly alkaline. It decomposes easily when heated. It decomposes slowly in humid air.
Sodium bicarbonate is an acidic salt formed by the neutralization of a strong base and a weak acid, and its solution is weakly alkaline when dissolved in water. This property allows it to be used as a leavening agent in food preparation. Sodium bicarbonate leaves sodium carbonate residue after reaction; excessive use will give the finished product an alkaline taste.
