Citric acid is an important weak organic acid, a colorless, odorless crystal, readily soluble in water, and its solution is acidic. In biochemistry, it is an intermediate in the citric acid cycle (tricarboxylic acid cycle), which occurs in the metabolism of all aerobic organisms. Citric acid is widely used as an acidity regulator, flavoring agent, and chelating agent.
Core Chemical Properties
Acidity: Weak organic acid, can adjust pH, remove scale and rust
Chelating ability: Can complex with metal ions such as calcium, magnesium, and iron, used as a chelating agent and water softener
Mixing with sodium hypochlorite: Will accelerate the decomposition of sodium hypochlorite, releasing chlorine gas, posing a safety risk
Mixing with sodium sulfite/sodium metabisulfite: Will react to produce toxic sulfur dioxide gas, strictly prohibited from mixing
Main Uses
1. Food and Beverage: Acidulant, acidity regulator, preservative, antioxidant (soft drinks, candy, canned goods, etc.)
2. Water Treatment: Adjusts pH, chelates metal ions, inhibits scale
3. Cleaning and Descaling: Descaling water dispensers, boilers, and pipes
4. Daily Chemicals/Industrial: Detergents, cosmetics pH adjusters, electroplating aids
